Love your passion and enthusiasm! 

I attempted coconut flour pastry for my mince pies a couple of weekends ago but as you probably know coconut pastry is very fragile. I love the idea of popping the &#039;pastry&#039; straight into the tin rather than rolling it out. I will def try this out!!

Glad to see you&#039;re going to shed the VFF&#039;s for a bit - even though they&#039;re the best &quot;minimal&quot; option out there, they still allow you to cheat a little if your form isn&#039;t 100%.
